1-2/3 cup all-purpose flour
2/3 cup bread flour
4-1/2 cup cake flour
2 Tb baking powder
1 cup sugar
1 tsp salt
1 cup heavy cream
8 oz currants or other chopped, dried fruit
Method:
- Except for the cream, combine all ingredients in the mixing bowl
- with the paddle attachment.
- On low speed begin mixing. Quickly pour in all the cream.
- Mix the dough just until combined.
- Roll out the dough to about ½-inch thickness. Cut out into rounds or cut into triangles using a knife.
- Arrange on a baking sheet. Brush tops with a beaten egg.
- Bake at 375°F for about 20 to 25 minutes. Serve warm.
