1-2/3 cup all-purpose flour
2/3 cup bread flour
4-1/2 cup cake flour
2 Tb baking powder
1 cup sugar
1 tsp salt
1 cup heavy cream
8 oz currants or other chopped, dried fruit

Method:

  1. Except for the cream, combine all ingredients in the mixing bowl
  2. with the paddle attachment.
  3. On low speed begin mixing. Quickly pour in all the cream.
  4. Mix the dough just until combined.
  5. Roll out the dough to about ½-inch thickness. Cut out into rounds or cut into triangles using a knife.
  6. Arrange on a baking sheet. Brush tops with a beaten egg.
  7. Bake at 375°F for about 20 to 25 minutes. Serve warm.
